Resumo O objetivo deste trabalho foi avaliar o perfil químico e sensorial, bem como a aceitabilidade, de espécies brasileiras de baunilhas. As espécies de baunilhas avaliadas foram: Vanilla planifolia, Vanilla chamissonis, Vanilla bahiana, and Vanilla pompona. Para tanto, foram utilizados a metodologia do perfil descritivo otimizado, testes de aceitação de consumidores por meio da aplicação dos extratos a chás e cremes, e análise de espectrometria de massa por meio de cromatografia gasosa. Foram identificados compostos voláteis, tais como vanilina, acetato de anisila, 4-metil-guaiacol, p-cresol, álcool benzílico e 2,3-butanodiol. As espécies V. planifolia e V. pompona apresentaram maiores intensidades de aroma de baunilha, aroma floral, aroma frutado, sabor de baunilha, cor marrom e gosto doce. Além disso, V. bahiana mostrou maior intensidade do atributo amadeirado, enquanto V. chamissonis mostrou atributos com menor intensidade. O chá de baunilha da espécie V. pompona teve melhor aceitação pelos consumidores. Entretanto, quando as baunilhas foram aplicadas a cremes, houve aceitação por mais de 80% dos consumidores de todas as amostras. As baunilhas nativas brasileiras apresentam diferentes perfis sensoriais e de compostos voláteis, além de potencial para alta aceitação pelo consumidor.

Abstract The objective of this work was to evaluate the chemical and sensory profile, as well as the acceptability, of Brazilian vanilla species. The evaluated vanilla species were Vanilla planifolia, Vanilla chamissonis, Vanilla bahiana, and Vanilla pompona. For this, the optimized descriptive profile methodology, consumer acceptance tests with extracts applied to teas and creams, and the analysis of mass spectrometry by gas chromatography were used. Volatile compounds, such as vanillin, anisyl acetate, 4-methyl guaiacol, p-cresol, benzyl alcohol, and 2,3-butanediol, were identified. The species V. planifolia and V. pompona exhibited a more intense vanilla aroma, floral aroma, fruity aroma, vanilla flavor, brown color, and sweet taste. In addition, V. bahiana showed a more intense woody attribute, while V. chamissonis showed less intense attributes. Vanilla tea from V. pompona had a better consumer acceptance. However, when the vanillas were applied to creams, there was an acceptance rate of over 80% of all samples. Brazilian native vanillas have different sensory and volatile profiles, besides potential for a high acceptance by consumers.

Abstract Six Brazilian commercial brands of snack bars were chosen to evaluate the importance of packaging, highlighting the potential of health claims on the acceptability of them. One hundred and two consumers evaluated bars in three sessions of acceptance test, using a nine-point hedonic scale: the first with no information about the product, the second containing the packaging of the product and the last with information on health-related claims associated with the consumption of the bar. A Randomized Complete Block Design structured the experiment. The results were analyzed using frequency distribution, internal preference mapping, ANOVA and Tukey test (p ≤ 0.05). In the blind test, the lower mean acceptance of the seed and protein bars showed the need for sensorial improvement. In the packaging test, the difference between the means show that the packaging of the bars evaluated did not differ on acceptance, differing only from the protein bar. Test with the information showed that information of health claims, for the most part, can positively influence sensory acceptance, even if in some cases there is no sensory pleasure.

Abstract The objective of this study was to develop, characterize and evaluate the stability of whey protein beverages containing anthocyanins from jabuticaba skins. Beverage formulations containing 0.5% (F1), 2.0% (F2), 4.0% (F3) and 6.0% (F4) of whey proteins and 2.0 mL of the concentrated phenolic extract from jabuticaba skins were developed. Physicochemical parameters (pH, acidity, total soluble solids, protein content, viscosity, color), antioxidant capacity, total anthocyanins and total phenols of the beverages were determined. In addition, a sensory acceptance test and a stability study were performed. The physicochemical analyses indicated that the protein concentration significantly (p < 0.05) affected the values of acidity, total soluble solids, total phenols and antioxidant capacity. The protein content also influenced the total color difference (ΔE) between formulations. The greater differences were observed in the formulation pairs containing low and high protein contents. The formulations F1, F2 and F3 were equally accepted on overall impression and color attributes. The stability study demonstrated that there was no significant change (p > 0.05) in the total anthocyanins and in the physicochemical properties of F3 over storage time, which indicated a good stability and a great market potential of the whey protein beverages containing anthocyanins from jabuticaba skins.

Resumo: O objetivo deste trabalho foi elaborar biscoitos tipo “cookies” sem glúten e pastéis com farinha de sorgo (Sorghum bicolor) rica em taninos, avaliar a digestibilidade in vitro de seus amidos e verificar como o conhecimento sobre os benefícios do sorgo pode contribuir para a aceitabilidade sensorial de ambos os produtos. Foram determinadas as concentrações de amido rapidamente digerível, amido lentamente digerível e amido resistente. A aceitação sensorial foi avaliada em duas sessões: uma sem informações sobre os benefícios do sorgo para a saúde humana; e outra em que essas informações foram divulgadas. As concentrações de amido resistente e de amido lentamente digerível dos biscoitos (5,07 e 16,22%, respectivamente) foram aproximadamente o dobro daquelas dos pastéis (2,54 e 8,89%, respectivamente), enquanto o oposto foi observado para a concentração de amido rapidamente digerível (9,89 e 19,65%, respectivamente). Os biscoitos e os pastéis foram sensorialmente aceitos, com um aumento significativo nas médias dos escores sensoriais após a divulgação das informações sobre os benefícios do sorgo. Dessa forma, biscoitos tipo “cookies” sem glúten e pastéis preparados com farinha de sorgo contendo taninos apresentam grande potencial comercial, mostrado pela boa aceitação sensorial e pelas concentrações de amido lentamente digerível e amido resistente dos produtos.

Abstract: The objective of this work was to develop gluten-free cookies and savory fried pies using tannin-rich sorghum (Sorghum bicolor) flour, to evaluate their in vitro starch digestibility, and to verify how knowledge of sorghum benefits may contribute to the sensory acceptability of both products. The contents of rapidly digestible starch, slowly digestible starch, and resistant starch were determined. Sensory acceptance was evaluated in two sessions: one without information on sorghum benefits to human health; and another where this information was presented. The resistant starch and slowly digestible starch contents of the cookies (5.07 and 16.22%, respectively) were about twice those of the savory fried pies (2.54 and 8.89%, respectively), whereas the opposite was observed for the rapidly digestible starch contents (9.89 and 19.65%, respectively). The cookies and savory fried pies were sensorially accepted, with a significant increase in the means of the sensory scores after the information on sorghum benefits was disclosed. Therefore, gluten-free cookies and savory fried pies prepared with tannin sorghum flour have a great commercial potential, shown by the good sensory acceptance and by the slowly digestible starch and resistant starch contents of these products.

RESUMO: Este estudo teve como objetivo desenvolver e caracterizar bebidas formuladas com proteínas de soro de leite adicionadas de luteína. Bebidas formuladas com 0,5 (F1), 2,0 (F2), 4,0 (F3) e 6,0% m/v (F4) de proteínas de soro caracterizadas fisico-quimicamente e microbiologicamente e, avaliadas sensorialmente. As análises físico-químicas indicaram que o teor de proteína alterou significativamente (P<0,05) os valores de acidez, sólidos solúveis e as coordenadas colorimétricas, foi possível ajustar modelos matemáticos para todas essas variáveis. As análises microbiológicas mostraram contaminação não significativa (P<0,05) durante o processamento que poderia comprometer a qualidade das bebidas. Os teores de carotenoides e a atividade antioxidante não variaram significativamente (P>0,05) com o aumento do teor de proteína. A formulação F2 apresentou a maior aceitação sensorial. As bebidas são uma alternativa promissora para o uso do soro de leite e aumentam o valor agregado do produto pela adição de luteína.

ABSTRACT: This study aimed to develop and characterize beverages formulated with whey protein and added lutein. Beverages formulated with 0.5 (F1), 2.0 (F2), 4.0 (F3) and 6.0% w/v (F4) whey protein were physicochemically and microbiologically characterized, and sensory evaluated. The physicochemical analyses indicated that the protein content significantly changed (P<0.05) the acidity values, soluble solids and the colorimetric coordinates, making possible to adjust mathematical models for all these variables. Microbiological analyses showed no significant contamination (P<0.05) during processing that would compromise drinks quality of the drinks. Carotenoid content and the antioxidant activity did not change significantly (p>0.05) with increased protein content. The F2 formulation showed the highest sensory acceptance. Beverages offer a promising alternative to whey use and enhance the value of the product by the addition of lutein.

Este trabalho teve como objetivo a elaboração de uma bebida eletrolítica a base de permeado da ultrafiltração de leite e avaliação de suas características físicas, químicas e microbiológicas, durante o período de armazenamento por 30 dias, nas temperaturas de 7°C e 25°C. A bebida apresentou-se clara, com coloração amarelo-esverdeada, osmolalidade de 311,6mOsmol.L-1 e carboidratos totais de 6,48% m/v. Não foram observadas alterações significativas de pH, acidez titulável e sólidos solúveis durante o tempo e temperatura de armazenamento (P>0,05). A osmolalidade e o teor de açúcares totais foram afetados pelo tempo (P<0,05), enquanto que o aumento de açúcares redutores foi afetado pelo tempo e pela temperatura de armazenamento (P<0,05). Observou-se correlação positiva (P<0,05) entre o teor de açúcares redutores e totais com a osmolalidade,porém a bebida manteve-se dentro da faixa de osmolalidade(entre 290mOsm L-1 e 330mOsm L-1). As coordenadas L*, a*, b* e C* foram afetadas somente pelo tempo de armazenamento (P<0,05). No estudo de vida útil, a bebida mostrou-se estável microbiologicamente. Assim, o permeado pode ser aproveitado como coproduto industrial na elaboração de bebidas eletrolíticas, em vista dos critérios de osmolalidade, além de conter minerais naturais

This study aimed to prepare a electrolyte drink based on permeate of milk ultrafiltration with evaluation of its physical, chemical, and microbiological properties during 30 days of storage at 7°C and 25°C. The drink became clear, with greenish-yellow color, osmolality of 311,6mOsmol L-1and total carbohydrates of 6.48 % m/v. There were no significant changes in pH, titratable acidity, and soluble solids during storage time and temperature (P>0.05). The osmolality and total sugars were affected by time (P<0.05), whereas the increase in reducing sugars was affected by storage temperature and time (P<0.05). Positive correlation (P<0.05) between total reducing sugars and osmolality was observed, but the drink was within the osmolality range for isotonic drinks (290mOsm L-1 and 330mOsm L-1). L*, a*, b*, and C* coordinates were affected only by the storage time (P<0.05). In the study of shelf life, the drink showed to be microbiologically stable. The permeate can be used as industrial residue in the preparation of electrolyte drinks in view of osmolality criteria, besides containing natural minerals

Neste trabalho, buscou-se verificar a atitude de consumidores da cidade de Viçosa-MG em relação a produtos contendo probióticos, por meio de um questionário validado para tal fim. Um total de 352 indivíduos respondeu aos questionários que, além dos itens de atitude, também avaliou questões de saúde dos consumidores, aceitação e frequência de consumo desses produtos. A validação interna valeu-se do coeficiente de Cronbach para medir a confiabilidade da escala de atitude. Para analisar o perfil desses consumidores, foi utilizada a estatística descritiva. Os resultados indicaram baixo consumo de produtos contendo probióticos pelos entrevistados. Foi obtida uma escala de atitude confiável (alfa = 0,70). De uma forma geral, a atitude dos entrevistados foi positiva, porém, verificou-se a necessidade de se desenvolver rótulos mais explicativos, expondo de forma clara as informações permitidas pela legislação brasileira, assim como reforçar as campanhas publicitárias que divulguem os benefícios do consumo de probióticos ao consumidor.

This study sought to determine the attitude of consumers in the city of Viçosa-MG, Brazil in relation to products containing probiotics using a validated questionnaire. A total of 352 individuals responded to questionnaires which, in addition to the items of attitude, also assessed the health of consumers and acceptance and frequency of consumption of these products. Internal validation utilized the Cronbach coefficient to measure the reliability of the attitude scale. To analyze the profile of these consumers, descriptive statistics was utilized. The results indicated a low consumption of products containing probiotics by respondents. A reliable attitude scale was obtained (alpha = 0.70). In general, the attitude of respondents was positive however it was verified that there is a need to develop more explanatory labels, clearly stating the information allowed by Brazilian legislation, as well as strengthen campaigns to promote the benefits of consuming probiotic to the consumer.

As indústrias de alimentos vêm inovando e desenvolvendo novos produtos e processamentos, e os consumidores estão mais conscientes e preocupados em relação às novas tecnologias alimentares, o que pode influenciar a aceitação dos alimentos. Nesse contexto, objetivou-se disponibilizar para a língua portuguesa o questionário originalmente desenvolvido em inglês que avalia a neofobia em relação à tecnologia de alimentos, denominado Food Technology Neophobia Scale (FNTS). O instrumento original composto por treze afirmações foi inicialmente traduzido para o português por três indivíduos bilíngues, de forma independente; na sequência, as versões em português foram traduzidas novamente para o inglês por outros três indivíduos bilíngues, também de forma independente. Procedeu-se então à análise das versões e ajustes para se obter uma única versão em português com equivalência conceitual e linguística, a qual recebeu o nome de Escala de Neofobia em relação à Tecnologia de Alimentos. As versões original e traduzida foram aplicadas a 30 indivíduos bilíngues para avaliação da confiabilidade e reprodutibilidade do questionário. Os resultados obtidos demonstraram que a tradução do instrumento foi adequada e confiável, podendo, portanto, ser empregada em estudos com consumidores brasileiros.

The food industries have been innovating and developing new products and processes.Consumers are aware and well concerned about new food technologies, which can influence food acceptance . In this context, the objective was to provide a portuguese version of the questionnaire developed in English to evaluate neophobia for food technology called Food Technology Neophobia Scale (FNTS). The original instrument consists of thirteen items and was initially translated into Portuguese by three bilingual individuals independently. Following the Portuguese versions were translated back into English by three other bilingual individuals, also independently. Analysis of versions and adjustments were performed to obtain a single version in Portuguese with linguistic and conceptual equivalence, which was called "Escala de Neofobia em relação à Tecnologia de Alimentos". The original and translated versions were applied to 30 bilingual individuals to evaluate the reliability and reproducibility of the questionnaire. The results showed that the translation of the instrument was adequate and reliable, therefore can be used in studies with Brazilian consumers.

The objective of this study was to predict by means of Artificial Neural Network (ANN), multilayer perceptrons, the texture attributes of light cheesecurds perceived by trained judges based on instrumental texture measurements. Inputs to the network were the instrumental texture measurements of light cheesecurd (imitative and fundamental parameters). Output variables were the sensory attributes consistency and spreadability. Nine light cheesecurd formulations composed of different combinations of fat and water were evaluated. The measurements obtained by the instrumental and sensory analyses of these formulations constituted the data set used for training and validation of the network. Network training was performed using a back-propagation algorithm. The network architecture selected was composed of 8-3-9-2 neurons in its layers, which quickly and accurately predicted the sensory texture attributes studied, showing a high correlation between the predicted and experimental values for the validation data set and excellent generalization ability, with a validation RMSE of 0.0506.

Ordered probit regression was used to analyze data of sensory acceptance tests designed to study the effect of brand name on the acceptability of beer samples. Eight different brands of Pilsen beer were evaluated by 101 consumers in two sessions of acceptance tests: blind evaluation and brand information test. Ordered probit regression, although a relatively sophisticated technique compared to others used to analyze sensory data, was chosen to enable the observation of consumers' behavior using graphical interpretations of estimated probabilities plotted against hedonic scales. It can be concluded that brands B, C, and D had a positive effect on the sensory acceptance of the product, whereas brands A, F, G, and H had a negative influence on consumers' evaluation of the samples. On the other hand, brand E had little influence on consumers' assessment.

Este trabalho objetivou estudar a cinética de degradação dos atributos sensoriais do suco integral de manga Ubá comercial e avaliar sua aceitabilidade sensorial durante o armazenamento. Amostras do produto foram armazenadas em estufas tipo B.O.D a 25, 35 e 45 ºC, providas de iluminação (650 lux) 24 horas por dia, durante 120 dias. Foram realizadas análises sensoriais com provadores treinados (Análise Descritiva Quantitativa - ADQ) e com consumidores. Também foram avaliadas as correlações entre as características sensoriais e físico-químicas (cor instrumental e teor de vitamina C). Os atributos sabor, aroma e cor variaram com a temperatura e o tempo de armazenamento, sendo que o aroma e o sabor foram os mais afetados pela temperatura, com valores de Q10 e Ea iguais a 4,16 e 25,31 kcal.mol-1; e 3,61 e 22,80 kcal.mol-1, respectivamente. As alterações sensoriais observadas pela equipe treinada são relacionadas com a degradação de vitamina C e variações nas coordenadas de cor (L* e ΔE*) do suco de manga. Entretanto, os consumidores não foram capazes de detectar alterações na qualidade global dos sucos. Observou-se que a ADQ pode ser uma ferramenta útil em estudos de vida de prateleira.

This study investigated the degradation kinetics of the sensory attributes of commercial whole mango (cv. Ubá) juice and evaluated its sensory acceptability during storage. Samples of the product were stored in a BOD incubator at 25, 35, and 45 ºC under 24 hours light (650 lux) for 120 days. Sensory analyses (Quantitative Descriptive Analysis - QDA) were conducted with trained panel and consumers. The correlations between sensory and physicochemical characteristics (instrumental color and vitamin C content) were also assessed. Flavor, aroma, and color vary with temperature and time of storage. Aroma and flavor were most affected by temperature with values of Q10 and Ea equal to 4.16 and 25.31 kcal.mol-1; and 3.61 and 22.80 kcal.mol-1, respectively. The sensory changes observed by the trained panel are related to the degradation of vitamin C and changes in the color coordinates (L* and ΔE*) of mango juice. However, consumers were unable to detect changes in the overall quality of the juices. It was observed that the QDA can be a useful tool to assess shelf-life.

Este trabalho avaliou a influência de alguns fatores da embalagem e do rótulo de cachaça no comportamento dos consumidores, por meio da aplicação dos resultados da análise conjunta de fatores na simulação do mercado de cachaça. Inicialmente, realizou-se a análise conjunta de fatores, objetivando-se estimar os coeficientes da preferência dos consumidores em relação a alguns fatores da embalagem e do rótulo de cachaça. Esses coeficientes da preferência dos consumidores foram usados na simulação da participação de mercado, utilizando-se o modelo da máxima utilidade. Observou-se que os fatores da embalagem e do rótulo influenciaram na intenção de compra dos consumidores, sendo que os consumidores apresentaram preferência semelhante em relação a esses fatores. Esses consumidores preferiram as cachaças da marca Seleta, acondicionadas na garrafa de vidro transparente com capacidade igual a 700 mL e com tampa metálica rosqueável, que traziam no rótulo ilustração não relacionada ao processo produtivo de cachaça e a informação "envelhecida por 36 meses em tonéis de carvalho". Verificou-se, também, que a técnica análise conjunta de fatores e a aplicação dos seus resultados na simulação da participação de mercado foram ferramentas úteis no entendimento do comportamento dos consumidores de cachaça.

This study evaluated the influence of packaging and labeling attributes of sugarcane spirit on consumers' behavior by applying the results of conjoint analysis in sugarcane spirit market share simulation. Firstly, a conjoint analysis was performed aiming to estimate the part-worths of each consumer for some sugarcane spirit packaging and labeling attributes. These part-worths were used in the market share simulation using the maximum utility model. It was observed that some packaging and labeling attributes affected consumer's purchase intention and that most consumers showed a similar preference pattern regarding these attributes. These consumers showed preference for the Seleta brand, which was bottled in 700 mL clear glass bottles with a metal screw cap that bore a label illustration unrelated to sugarcane spirit production process and had the information "aged 36 months in oak barrels". This study also showed that conjoint analysis and the use of its results in the market share simulation proved important tools to better understand consumer behavior towards intention to purchase sugarcane spirit.

Alimentos isentos ou de baixo nível de gordura constituem um desafio para a indústria de alimentos. Nesse contexto, este trabalho teve como objetivo estudar o efeito da adição de concentrado proteico de soro (CPS) nas características sensoriais e aceitabilidade de sobremesas lácteas sem gordura. Quatro formulações foram desenvolvidas com diferentes concentrações de CPS (0%, 1,5%, 3,0% e 4,5% m v-1) e caracterizadas sensorialmente por meio da Análise Descritiva. A aceitabilidade das formulações foi avaliada por 94 consumidores que utilizaram escala hedônica de nove pontos. As sobremesas foram caracterizadas por oito atributos sensoriais: cor, firmeza, resistência ao corte, brilho, consistência, gomosidade, aroma e sabor de baunilha. As formulações contendo 3,0 e 4,5% de CPS apresentaram maior intensidade de todos os atributos sensoriais. A adição de CPS foi efetiva na composição da textura das sobremesas lácteas diet, além de realçar a cor, sabor e aroma do produto. As formulações contendo 1,5 e 3,0% de CPS foram as mais aceitas, evidenciando que a utilização do CPS nessas concentrações favoreceu a aceitabilidade do produto, proporcionando características sensoriais agradáveis aos consumidores.

Foods free or low-fat constituted are a challenge for the food industry. Thus, the objective of this research was to study the effect of the addition of whey protein concentrate (WPC) in the sensory profile and acceptability of dairy desserts free-fat. Four formulations had been developed with different WPC concentrations (0%, 1.5%, 3.0% or 4.5%, mass%) and sensory characterized by Descriptive Analysis. The acceptability of the formulations was evaluated by 94 consumers who had used the nine-point hedonic scale. Dairy desserts were characterized by eight sensory attributes: color, firmness, resistance to cut, brightness, thickness, gumminess, aroma and vanilla flavor. The formulations containing 3.0 and 4.5% of WPC presented greater intensity of all the attributes. The addition of WPC was effective in the composition of the texture of free-fat dairy desserts and enhances color, flavor and aroma of the product. The formulations with 1.5 and 3.0% WPC had been most accepted, showing that the use of WPC in these concentrations favored the acceptability of the product, providing pleasant sensory characteristics to consumers.

É importante entender como as mudanças na formulação de um alimento podem afetar suas características. Sendo assim, o objetivo deste trabalho foi estudar o efeito da adição de concentrado protéico de soro (CPS) na textura de sobremesas lácteas tipo flan sem gordura. A correlação entre as medidas instrumentais e sensoriais também foi investigada. Quatro formulações foram desenvolvidas com diferentes concentrações de CPS (0, 1,5, 3,0 e 4,5% em massa) e avaliadas instrumentalmente por meio de análise de perfil de textura (TPA) e reologia. A consistência foi avaliada por nove julgadores treinados. As formulações adicionadas de CPS apresentaram maior firmeza, elasticidade, mastigabilidade e gomosidade em relação à amostra controle, como indicado na análise de componentes principais. O comportamento ao escoamento das sobremesas lácteas foi caracterizado como tempo-dependente e pseudoplástico. A formulação contendo 4,5% de CPS a 10 °C apresentou maior comportamento tixotrópico. Os dados experimentais foram ajustados ao modelo de Herschel-Bulkley. A adição de CPS contribuiu para a textura das sobremesas lácteas sem gordura. Os valores de tensão inicial, viscosidade aparente e consistência das sobremesas lácteas aumentaram com a concentração de CPS. A presença de CPS promoveu uma estrutura de gel mais forte como resultado das interações proteína-proteína. A correlação entre os parâmetros instrumentais e a consistência sensorial forneceu informações práticas para a indústria de alimentos.

It is important to understand how changes in the product formulation can modify its characteristics. Thus, the objective of this study was to investigate the effect of whey protein concentrate (WPC) on the texture of fat-free dairy desserts. The correlation between instrumental and sensory measurements was also investigated. Four formulations were prepared with different WPC concentrations (0, 1.5, 3.0, and 4.5 wt. (%)) and were evaluated using the texture profile analysis (TPA) and rheology. Thickness was evaluated by nine trained panelists. Formulations containing WPC showed higher firmness, elasticity, chewiness, and gumminess and clearly differed from the control as indicated by principal component analysis (PCA). Flow behavior was characterized as time-dependent and pseudoplastic. Formulation with 4.5% WPC at 10 °C showed the highest thixotropic behavior. Experimental data were fitted to Herschel-Bulkley model. The addition of WPC contributed to the texture of the fat-free dairy dessert. The yield stress, apparent viscosity, and perceived thickness in the dairy desserts increased with WPC concentration. The presence of WPC promotes the formation of a stronger gel structure as a result of protein-protein interactions. The correlation between instrumental parameters and thickness provided practical results for food industries.

O requeijão cremoso é um tipo de queijo fundido originalmente brasileiro, fabricado em todo território nacional com algumas variações de tecnologia. Este é um dos principais tipos de queijos produzido e consumido no Brasil e apresenta como característica o elevado teor de gordura. Por outro lado, a gordura apresenta papel fundamental na aparência, sabor e textura de requeijão, portanto desenvolver um produto light com qualidade sensorial semelhante à versão tradicional é um grande desafio à indústria de alimentos. Nesse contexto, o objetivo deste trabalho foi avaliar a composição química e a aceitabilidade sensorial de requeijão cremoso light, com diferentes níveis de redução de gordura, em relação à textura e impressão global. O experimento seguiu um delineamento de superfície de resposta, o Delineamento Composto Central Rotacional (DCCR) com dois fatores (gordura e umidade). A aceitabilidade sensorial foi avaliada por 100 consumidores, utilizando a escala hedônica de nove pontos. Os resultados obtidos demonstraram que os requeijões com diferentes níveis de redução de gordura apresentaram aceitabilidade sensorial semelhante quando combinados a um aumento proporcional do teor de umidade. Os produtos que apresentaram extrato seco desengordurado (ESD) de aproximadamente 19,3%, originados de diferentes combinações entre gordura e umidade, foram os que apresentaram melhor aceitação por parte dos consumidores, demonstrando a importância do ESD na aceitabilidade sensorial.

Cream cheesecurd is a type of processed cheese, originally Brazilian, produced throughout the entire Brazilian territory with some technological variations. This is one of the main types of cheese produced and consumed in Brazil and it is known for presenting an elevated fat content. On the other hand, the fat plays a fundamental role in appearance, flavor and texture of cheese, then developing a light product with sensory quality similar to the traditional version is a major challenge to food industry. In this context, the objective of this study was to evaluate the chemical composition and sensory acceptability of light cream cheesecurd with different levels of fat reduction for texture and overall impression. The experiment followed a design of response surface, the Central Composite Rotatable Design (CCRD) with two factors (fat and moisture). The sensory acceptability was evaluated by 100 consumers, by the hedonic scale of nine points. The results showed that the cheesecurds with different levels of fat reduction had similar sensory acceptability when combined with a proportional increase in moisture content. The products that presented dry defatted extract (DDE) of approximately 19.3%, originated from different combinations of fat and moisture, were those with better acceptance by consumers, demonstrating the importance of DDE in sensory acceptance.
